Despite the fact that pea soup according to this recipe is lean, it turns out so satisfying that you don’t even remember about meat! Thick, warming and very appetizing, pea soup is a gorgeous first course. Your household will ask for supplements, and more than once.
Ingredients for Pea Soup
- 2-2.5 liters of water;
- 1.5-2 tbsp. peas (depending on how thick you want the soup);
- 2-3 medium potatoes;
- 1-2 small carrots;
- 1 medium onion;
- vegetable oil;
- salt, black pepper and ground pepper - to your taste;
- bay leaf - 1-2 pcs.;
- fresh or frozen greens: parsley, dill, green onions.
The method of preparation of pea soup
Since dry peas are cooked longer than all other ingredients, we will put it first to cook. Pour cold water into the pan, pour the peas and cook over medium heat. When it boils, we slightly reduce the fire, and move the lid to the side, as the peas strive to escape to the stove. But we will not allow this, periodically stirring and removing foam with a spoon.
In the meantime, peas are cooked (about half an hour), prepare carrot-onion frying.
Cut the onions smaller and pour them into a pan with preheated vegetable oil. Fry, stirring over medium heat to make the onion translucent, and add coarsely grated carrots.
After stirring, we continue to fry the carrots with onions until the vegetables become soft and acquire a beautiful golden hue, which the roast will convey to the soup.
Peel the potatoes and cut into small cubes.
Peas become soft, it's time to add the rest of the ingredients. Pour potato cubes into the pan, mix and cook together until the potatoes are half-ready (about 7 minutes).
Then add the roast - look how beautiful our soup immediately became! Mix and salt - about 2/3 tbsp. l salt or as per your taste.
After another 2-3 minutes, it's time to add spices. Put in the soup 10-15 pcs. peppercorns and 1-2 bay leaves. What delicious flavors will instantly spread throughout the kitchen! Delicious smells can lure even neighbors to the table, not like household members (even those who usually do not like first courses). And to make pea soup even tastier and brighter, add a couple of tablespoons of chopped herbs for 1-2 minutes before being ready.
