Beer boiled in beer - a dish of Czech and German cuisine, which is nowadays prepared everywhere. You can bake the pork leg in the oven in a deep baking sheet in which beer is poured. But it’s much easier to brew meat in beer. The result is a semi-finished product. It can be glazed and baked in the oven to make a crust, prepare a salad from the shank or serve cold with horseradish and mustard. Tasty in any case, besides - hearty and fairly simple to cook.
I took light beer for shank in this recipe, it is more to my taste. If you cook in dark beer, then the pigskin takes on a golden brown hue.

Ingredients for shank boiled in beer
- 2.5 kg of pork shank;
- 3 bottles of light beer;
- 1 teaspoon of Imereti saffron;
- 1 parsley root;
- 1 bunch of celery;
- 2 carrots;
- 2 onions;
- 1 head of garlic;
- black pepper and bay leaf;
- 2 teaspoon yellow mustard seeds;
- 2 teaspoon ground sweet paprika;
- 20 ml of quality olive oil;
- 1 teaspoon of brown sugar;
- salt, water.
The method of cooking shank boiled in beer
Choose meaty tar shanks in the market or in the store. I chose two medium sizes, for a small company this is what I need. You can take one big leg, but you need to cook it longer, and the bone in it is big.
So, wash the shanks, put in the largest pan that is on the farm.
Next, add seasonings - peeled parsley root, a bunch of celery (stalks and greens), a chopped head of garlic, halved onions with husks, carrots, a few leaves of laurel and a teaspoon of black pepper peas.
In addition to the seasonings listed above, you can add fennel seeds, dill umbrellas, parsley and caraway seeds.
Now we pour light beer into the pan to the shanks, add water so that the meat is completely drowned, pour table salt and Imereti saffron for a golden color. From personal experience: 4-5 teaspoons without a slide is enough.
We close the pan with a lid, bring to a boil and cook on the low heat for about two hours. After an hour and a half, you can check the knuckle - if the skin is soft, the meat is easily separated from the bones, then turn off the gas, leave the meat in the pan for half an hour.
Depending on the purpose for which the shank is intended, its further fate will be determined. For example, nothing more needs to be done for the salad, just cool the meat.
If the shank is served on the table whole, and even with fried potatoes, it is advisable to brown the skin.
To do this, mix ground sweet paprika in a bowl with high-quality olive oil, brown sugar and yellow mustard seeds. Lubricate the skin with a brush and send to a very hot oven.
Bake the shank for about 15 minutes, until it is browned and crispy.
To the table, shank boiled in beer, serve with fried potatoes and cold beer. Enjoy your meal!
